This refreshing salad is a huge hit for kids and adults and if there’s an ingredient you don’t like in this recipe, just skip it. I love the vast array of colour and the fresh crunch in this salad, if you end up with left overs, you can pack them up for lunches for your family.


2 cups corn.

1 cup black beans.

3 small tomatoes.

1 english cucumber.

1 small jalapeño pepper, remove seeds.

1 red Pepper.

1 Orange Pepper.

1 small red onion.

2 avocado, ripe  but not mushy.

1-2 cup cilantro leaves.


Lime juice.

1/2 cup extra virgin olive oil.

1 tsp ground cumin.

2 tbsp honey, non pasteurized.

1 clove garlic, crushed.

Salt and Pepper


Dice all the vegetables and toss in a salad bowl.

Combine all the ingredients for dressing, and add to salad. Its upo top you how much dressing yop wish to add.
